Most in germany is doable in a day. Paddling camping is the thing. River is good. Flatwater as sell. Walking on dry riverbed is not prefered.

Hannoversch Münden is about 200km to Minden.

If you like culture: Weser (see: "The German Fairy Tale Route")
If you prefer nature: Spree-Dahme. River. No infrastructure, No supermarket, no pubs. But really nice.
Do you like tours in open water? Around Bodensee is worth a try.
Also nice: Elbe from Bad Schandau to Wittenberg (see: Luther) - including Dresden and Dessau ("Bauhaus").
Mosel start east of Trier (Metz): wine!, nice, easy, some boatslides, not so much canoeclubs, but some of campgrounds.
Everywhere, You can stay for a couple of nights at Canoeclubs near the water.
